Spinach, Mushroom & Bacon Quiche

Ingredients

  • 1 9-inch unbaked pie crust

  • 6 slices bacon

  • 1 cup Swiss cheese grated

  • 1/4 cup cheddar cheese grated

  • 3 bunches fresh spinach

  • 4 oz fresh mushrooms

  • 4 eggs

  • 2 cups half and half

  • 3/4 t salt

  • 1/4 t pepper

Directions

  • Preheat oven to 425°
  • Cook bacon until crisp. Chop and place in pie shell. (reserve enough to sprinkle on top later)
  • Place spinach and mushrooms in pan with bacon grease and cook down. Drain.
  • Add spinach and mushrooms to pie shell along with both cheeses.
  • Beat eggs slightly; beat in remaining ingredients. Pour egg mixture into pie dish.
  • Cook uncovered in 425° oven for 15 minutes.
  • Sprinkle reserved chopped bacon on top.
  • Reduce oven temperature to 350°. Cook uncovered until knife inserted halfway between center and edge comes out clean, about 50 minutes longer. (if top starts getting too dark, cover with aluminum foil)
  • Let stand 30 minutes before cutting.
