Mac & Cheese Stuffed Potato Skins

Is this just too crazy to be true? What a great way to enjoy your Mac & Cheese!  

Ingredients

  • 1 box Mac & Cheese

  • 3 large potatoes (pre-baked)

  • 1 cup panko crumbs

  • 1/3 cup mixed cheese (cheddar & jack)

  • 3 tablespoons butter (melted)

  • 6 slices bacon

  • 4 each green onions

  • Oil for frying

Directions

  • Preheat oven to 400°F
  • Prepare Mac & Cheese according to instructions on box or use your own great recipe. Set aside when finished.
  • Cook bacon and chop into 1/2″ pieces.
  • Cut baked potatoes in half and then scoop out potatoes leaving approx. 1/2″ thick skin.
  • Fry skins in oil until golden brown. Drain on paper towel.
  • In a small bowl mix together panko crumbs and cheese. Mix in melted butter.
  • Building the Skins
  • Add a few pieces of chopped bacon to the bottom of each potato skin.
  • Scoop approx. 1/2 of Mac & Cheese into in each potato skin.
  • Top each with panko cheese mixture.
  • Add remaining cooked bacon to each one.
  • Bake for 15 minutes until golden brown on top.
  • Remove from oven and add chopped green onions.
