Louise’s Dutch Croquettes

Ingredients

  • 3 T butter

  • 4 T flour

  • 1 cup milk

  • 1 t minced parsley

  • 2 t minced onion

  • 2 cups cooked chicken, minced

  • 1/2 t lemon juice

  • pinch sage

  • salt & pepper to taste

  • 1 egg

  • 1 T water

  • bread crumbs

  • oil for frying

Directions

  • In a saucepan, melt butter and stir in flour.
  • Gradually add milk to make a thick sauce.
  • Add parsley, onion, chicken, and lemon juice. Add seasonings.
  • Shape into cones or cylinders.
  • Blend slightly beaten egg and water.
  • Roll cones in crumbs, then in egg mixture, then in crumbs again. Chill.
  • Heat oil to 385°F and fry croquettes until golden brown.
