Banana Drop Cookies

Ingredients

  • 2 ¼ cups flour

  • 2 ½ teaspoons baking powder

  • ½ tsp salt

  • 2/3 cup shortening

  • 1 cup sugar

  • 2 eggs

  • 1 teaspoon vanilla

  • 1 cup ripe mashed banana (about 2)

Directions

  • Preheat oven to 350° F.
  • Sift together the flour, baking powder, and salt.
  • In a separate bowl, cream the shortening & sugar. Add the eggs and vanilla.
  • Add the flour mixture alternately with the mashed banana. Beat until smooth.
  • Drop by tablespoonsful onto ungreased baking sheets.
  • Sprinkle with sugar & cinnamon.
  • Bake for 10 minutes. Cool on wire racks.
