Chicken a la King
  1. 4 oz mushrooms, sliced
  2. 1 small green pepper, chopped (about 1/2 cup)
  3. 1/2 cup butter
  4. 1/2 cup flour
  5. 1 t salt
  6. 1/4 t pepper
  7. 1 1/2 cups milk
  8. 1 1/4 cups chicken broth
  9. 2 cups cut up cooked chicken
  10. 1 jar (4 oz) whole pimento, chopped
  11. Waffles (much better than toast or mashed potatoes...trust me!)
  1. Melt butter in 3-quart saucepan over medium-high heat.
  2. Cook bell pepper and mushrooms in butter, stirring occasionally, until bell pepper is crisp-tender.
  3. Stir in flour, salt and pepper. Cook over medium heat, stirring constantly, until bubbly; remove from heat.
  4. Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute.
  5. Stir in chicken and pimientos; cook until hot.
