Spinach, Mushroom & Bacon Quiche

Ingredients
1 9-inch unbaked pie crust
6 slices bacon
1 cup Swiss cheese grated
1/4 cup cheddar cheese grated
3 bunches fresh spinach
4 oz fresh mushrooms
4 eggs
2 cups half and half
3/4 t salt
1/4 t pepper
Directions
- Preheat oven to 425°
- Cook bacon until crisp. Chop and place in pie shell. (reserve enough to sprinkle on top later)
- Place spinach and mushrooms in pan with bacon grease and cook down. Drain.
- Add spinach and mushrooms to pie shell along with both cheeses.
- Beat eggs slightly; beat in remaining ingredients. Pour egg mixture into pie dish.
- Cook uncovered in 425° oven for 15 minutes.
- Sprinkle reserved chopped bacon on top.
- Reduce oven temperature to 350°. Cook uncovered until knife inserted halfway between center and edge comes out clean, about 50 minutes longer. (if top starts getting too dark, cover with aluminum foil)
- Let stand 30 minutes before cutting.
