Pumpkin Pancakes

1 T ground flaxseed + 3 T water
1 1/2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon sea salt
1/2 cup canned pumpkin puree
1 cup plus 3 T almond milk, room temp
2 tablespoon melted coconut oil, plus more for brushing
1 1/2 teaspoons vanilla extract
Maple syrup, yogurt, pecans (optional)
Directions
- Combine flaxseed and water and set aside
- In large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In med. bowl, whisk together pumpkin, almond milk, coconut oil, vanilla, and flaxseed mixture.
- Pour wet ingredients into bowl with dry ingredients and stir.
- Serve with maple syrup, yogurt, and pecans
