Ingredients

  • 1 T ground flaxseed + 3 T water

  • 1 1/2 cups flour

  • 2 tablespoons sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1/4 teaspoon sea salt

  • 1/2 cup canned pumpkin puree

  • 1 cup plus 3 T almond milk, room temp

  • 2 tablespoon melted coconut oil, plus more for brushing

  • 1 1/2 teaspoons vanilla extract

  • Maple syrup, yogurt, pecans (optional)

Directions

  • Combine flaxseed and water and set aside
  • In large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
  • In med. bowl, whisk together pumpkin, almond milk, coconut oil, vanilla, and flaxseed mixture.
  • Pour wet ingredients into bowl with dry ingredients and stir.
  • Serve with maple syrup, yogurt, and pecans
