Pumpkin Hummus

Ingredients

  • 15.5 ounces chickpeas, drained and rinsed

  • 3/4 cup pure pumpkin puree

  • 2 cloves garlic

  • 2 tablespoons tahini

  • 1 teaspoon chili powder

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • 1 tablespoon lemon juice

  • 1 teaspoon coarse salt

  • 1/4 cup olive oil

Directions

  • Place all of the ingredients in a food processor or blender and blend until smooth and creamy.
  • Add more olive oil 1 tablespoon at a time if the hummus is too thick. Blend until it reaches desired creaminess.
  • Garnish the more olive oil and roasted pumpkin seeds.
  • To garnish (optional) : chopped parsley, sesame seeds, paprika, extra virgin olive oil
  • Serve with fresh vegetables, crackers, or pita bread.
