Pumpkin Hummus

Ingredients
15.5 ounces chickpeas, drained and rinsed
3/4 cup pure pumpkin puree
2 cloves garlic
2 tablespoons tahini
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 tablespoon lemon juice
1 teaspoon coarse salt
1/4 cup olive oil
Directions
- Place all of the ingredients in a food processor or blender and blend until smooth and creamy.
- Add more olive oil 1 tablespoon at a time if the hummus is too thick. Blend until it reaches desired creaminess.
- Garnish the more olive oil and roasted pumpkin seeds.
- To garnish (optional) : chopped parsley, sesame seeds, paprika, extra virgin olive oil
- Serve with fresh vegetables, crackers, or pita bread.
