Orzo Pilaf w/Mushrooms

Ingredients

  • 1/2 pound sliced fresh mushrooms

  • 1 small onion, finely chopped

  • 2 tablespoons olive oil

  • 2 garlic cloves, minced

  • 1 can (14-1/2 ounces) chicken broth

  • 1 cup uncooked orzo pasta

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 2 tablespoons minced fresh parsley

Directions

  • In a large saucepan, saute mushrooms and onion in oil until tender.
  • Add garlic; cook and stir 1 minute longer.
  • Add the broth, orzo, salt and pepper. Bring to a boil.
  • Reduce heat; cover and simmer for 10-14 minutes or until pasta is tender.
  • Stir in parsley.
