Mashed Potatoes and Gravy

Ingredients

  • MASHED POTATOES
  • 2 pounds baking potatoes, peeled and quartered

  • 1 cup milk

  • 2 tablespoons butter

  • salt and ground black pepper to taste

  • GRAVY
  • 2 tablespoons butter

  • 1/4 cup all-purpose flour

  • 2 cups chicken, beef, turkey, or vegetable broth (or pan drippings)

Directions

  • MASHED POTATOES
  • Bring a large pot of salted water to a boil. Add potatoes and lower heat to medium. Simmer until potatoes are tender, 15 to 20 minutes.
  • Drain potatoes and return to the pot. Season with salt and pepper. Add butter. Using a potato masher, mix until butter and seasonings are mixed in well. Add milk a little at a time and mash until desired consistency is reached and potatoes are smooth and creamy.
  • GRAVY
  • In a medium-size saucepan, melt butter over medium high heat.
  • Whisk in flour until well combined and no white specks remain. Let cook 2 minutes.
  • Slowly pour in broth and whisk well.
  • Bring to a simmer and heat until thickened to desired consistency, about 2 minutes, whisking constantly.
