Louise’s Dutch Croquettes

Ingredients
3 T butter
4 T flour
1 cup milk
1 t minced parsley
2 t minced onion
2 cups cooked chicken, minced
1/2 t lemon juice
pinch sage
salt & pepper to taste
1 egg
1 T water
bread crumbs
oil for frying
Directions
- In a saucepan, melt butter and stir in flour.
- Gradually add milk to make a thick sauce.
- Add parsley, onion, chicken, and lemon juice. Add seasonings.
- Shape into cones or cylinders.
- Blend slightly beaten egg and water.
- Roll cones in crumbs, then in egg mixture, then in crumbs again. Chill.
- Heat oil to 385°F and fry croquettes until golden brown.
