Italian Zucchini Soup

Ingredients

  • 1 lb bulk Italian sausage

  • 3 cans (28 ozs) diced tomatoes

  • 4 cans (14.5 ozs) beef broth

  • 2 lbs zucchini, diced

  • 2 green peppers, diced

  • 2 cups sliced celery

  • 2 cups sliced carrots

  • 1 cup chopped onion

  • 2 tsps Italian seasoning

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1 tsp salt

  • ½ tsp sugar

  • ¼ tsp black pepper

  • ¼ tsp garlic powder

  • 2 cups cooked pasta

Directions

  • In a Dutch oven or large pot, brown & crumble the sausage; drain.
  • Add remaining ingredients except pasta.
  • Bring to a boil, cover, lower heat and simmer for 1 ½ hours.
  • Add pasta and heat through.
