Cinnamon Toast Crunch® Coated Apple Stuffed French Toast

Ingredients

  • French Toast
  • 4 slices Texas Toast Bread

  • 3 eggs

  • 1 tablespoon half & half

  • 1 1/2 teaspoons vanilla extract

  • 2 cups Cinnamon Toast Crunch®

  • 3 tablespoons butter, for frying

  • Apple & Cream Cheese Filling
  • 8 tablespoons butter

  • 4 Granny Smith apples, peeled, cored, sliced into 1/8-thick slices

  • 3 tablespoons plus 1 teaspoon granulated sugar

  • 1/2 teaspoon ground cinnamon

  • 4 ounces cream cheese, softened

Directions

  • Apple & Cream Cheese Fillings
  • Heat 3 tablespoons butter in large nonstick skillet over medium heat. When the foaming subsides, add apples and cook, stirring occasionally, until apples have softened and are beginning to caramelize, 8 to 10 minutes. Sprinkle 2 tablespoons granulated sugar and ¼ teaspoon cinnamon over apples. Cook until apples are golden, about 2 minutes more. Transfer apples to bowl and let cool.
  • In a separate bowl, stir cream cheese with remaining 4 teaspoons granulated sugar until smooth.
  • French Toast
  • Add Cinnamon Toast Crunch® to food processor. Crunch into small pieces, then transfer to a large bowl.
  • In another bowl, whisk together the eggs and half & half.
  • Carefully slice a deep pocket into each slice of bread. Spread cream cheese mixture into each pocket, then fill with cooked apples.
  • Heat a large frying pan over medium/low heat for 5 minutes.
  • Dip one slice of bread into the egg mixture. Coat both sides. Let excess drip off then transfer to the Cinnamon Toast Crunch® bowl. Cover the bread with cereal pieces, gently pressing into each side.
  • Melt about 1 tablespoon of butter in the frying pan. Place the bread slice into pan. Cook each side for 2-3 minutes or until golden brown.
  • Between each slice, remove any cereal crumbs from pan and add more butter.
  • Repeat process for all bread slices. Cooking time may decrease as pan gets hotter.
  • Dust with powdered sugar.
