Brussels Sprouts Skillet w/ Crispy Pancetta-Garlic Bread Crumbs

Ingredients

  • 1 1/2 Tbsp unsalted butter

  • 2 garlic cloves, minced

  • 1 cup panko bread crumbs

  • Kosher salt and freshly ground black pepper

  • 4 ounces pancetta

  • 2 pounds brussels sprouts, halved

  • Zest and juice of 1 lemon

Directions

  • In a skillet, melt butter over medium heat. Add garlic.
  • Add panko crumbs and cook until golden brown. Season with salt and pepper.
  • In large skillet add pancetta until crisp. Transfer to paper towel.
  • Add brussels to pan, season with salt and pepper. Add lemon zest and juice.
  • Transfer to large bowl and top with the bread crumbs and pancetta.
