Brussels Sprouts Skillet w/ Crispy Pancetta-Garlic Bread Crumbs

Ingredients
1 1/2 Tbsp unsalted butter
2 garlic cloves, minced
1 cup panko bread crumbs
Kosher salt and freshly ground black pepper
4 ounces pancetta
2 pounds brussels sprouts, halved
Zest and juice of 1 lemon
Directions
- In a skillet, melt butter over medium heat. Add garlic.
- Add panko crumbs and cook until golden brown. Season with salt and pepper.
- In large skillet add pancetta until crisp. Transfer to paper towel.
- Add brussels to pan, season with salt and pepper. Add lemon zest and juice.
- Transfer to large bowl and top with the bread crumbs and pancetta.
