Banana Drop Cookies

Ingredients
2 ¼ cups flour
2 ½ teaspoons baking powder
½ tsp salt
2/3 cup shortening
1 cup sugar
2 eggs
1 teaspoon vanilla
1 cup ripe mashed banana (about 2)
Directions
- Preheat oven to 350° F.
- Sift together the flour, baking powder, and salt.
- In a separate bowl, cream the shortening & sugar. Add the eggs and vanilla.
- Add the flour mixture alternately with the mashed banana. Beat until smooth.
- Drop by tablespoonsful onto ungreased baking sheets.
- Sprinkle with sugar & cinnamon.
- Bake for 10 minutes. Cool on wire racks.
