Ingredients

  • 1 rack of pork baby back ribs

  • 2 cans of root beer soda

  • DRY RUB
  • 1/2 cup brown sugar

  • 1/4 cup paprika

  • 1 t black pepper

  • 1 t salt

  • 1 t chili powder

  • 1 t garlic powder

  • 1 t onion powder

  • 1 t cayenne

Directions

  • In a medium size bowl, mix together all dry rub ingredients. Set aside.
  • Remove the thin membrane from the back of ribs.
  • Once the membrane is removed, place the ribs in a large zip lock back and add 2 cans of root beer soda. Let marinade over night (at least 8 hours)
  • Remove ribs from marinade and coat both sides with rib rub. Cover and place in the refrigerator until you’re ready to cook them.
  • Prepare Weber for direct heat (this is only for the first step).
  • Place ribs on grill, meaty side down over direct heat. After 3 minutes turn 90° to create diamond shaped grill marks. After 3 more minutes flip ribs and cook 3 additional minutes. Remove from grill and wrap in heavy duty aluminum foil.
  • Divide hot briquettes into two piles, one on each side of the grill for indirect heat.
  • Place wrapped ribs in the center of the grill and cook at 250° for approximately 1 1/2 -2 hours or until internal temperature reaches 190°.
  • Remove from foil, place back on grill and brush with your favorite BBQ sauce. Cook an additional 20 minutes.
