Natures Crockpot with Shrimp
  1. 1 medium size watermelon
  2. 2 lb. white rice
  3. 1 lb. uncooked shrimp, clean and deveined
  4. 1 red pepper
  5. 1 yellow pepper
  6. 4 carrots, chopped
  7. 6 oz.sugar snap peas
  8. 1 lb. pineapple chunks
  9. 10 oz. water chestnuts
  10. 2 cup bean sprouts
  11. 4 cloves garlic, minced
  12. 4 T butter
  13. 5 oz. soy sauce
  14. Salt and pepper to taste
  1. Prepare barbecue for indirect cooking (this means make sure your heat source will not be directly over watermelon!).
  2. Cut an 8-10" oval out of the top of the watermelon. Scoop out all pink melon with a large spoon. Add all ingredients to inside of melon.
  3. Stir and mix well.
  4. Replace oval top. Wrap entire melon in foil. Place on grill (not directly over flames) and cover. Cook for 3 hours.
  5. Add charcoal as needed to maintain a 400 degree temperature.
  6. Serves approx. 8 people.
