Pickled Eggs and Beets
  1. 18 hard boiled eggs
  2. 2 cups cider vinegar
  3. 2 cups hot water
  4. 2 cans (16 oz each) sliced beets w/ liquid
  5. 2/3 cup packed brown sugar
  6. 1 t salt
  7. 1 medium onion sliced
  8. 4 bay leaves
  1. In a large jar, add together vinegar, beet liquid, water, salt, and brown sugar. Mix well.
  2. Add hard boiled eggs.
  3. Add beets, onion, and bay leaves.
  4. Cover and refrigerate at least 2 days.

    Our family is from the Amish area of Pa. We use only the beets, beet juice, cider vinegar,and water with the hard boiled eggs.They are delicious!
