Natures Crockpot with Shrimp

Ingredients
- 1 medium size watermelon
- 2 lb. white rice
- 1 lb. uncooked shrimp, clean and deveined
- 1 red pepper
- 1 yellow pepper
- 4 carrots, chopped
- 6 oz.sugar snap peas
- 1 lb. pineapple chunks
- 10 oz. water chestnuts
- 2 cup bean sprouts
- 4 cloves garlic, minced
- 4 T butter
- 5 oz. soy sauce
- Salt and pepper to taste
Instructions
- Prepare barbecue for indirect cooking (this means make sure your heat source will not be directly over watermelon!).
- Cut an 8-10" oval out of the top of the watermelon. Scoop out all pink melon with a large spoon. Add all ingredients to inside of melon.
- Stir and mix well.
- Replace oval top. Wrap entire melon in foil. Place on grill (not directly over flames) and cover. Cook for 3 hours.
- Add charcoal as needed to maintain a 400 degree temperature.
- Serves approx. 8 people.
