Ingredients
- 1 t onion powder
- 1 t chili powder
- 1 t kosher salt
- 1/2 t black pepper
- 1/2 t thyme
- 1/2 t paprika
- 1/8 t cayenne pepper
- 1 pork tenderloin, about 1 pound
Mango Salsa (combine all ingredients)
- 2 cups diced ripe mango (about 2 mangos)
- 1/ 2 cup red onion, finely diced
- 1 medium avocado, diced
- 1/4 c minced fresh cilantro
- 2 T extra virgin olive oil
- Freshly ground black pepper
- Pinch of kosher salt
- 1/4 t red pepper flakes
- Juice from 1 lime
Instructions
- In a small bowl, combine the onion powder, chili powder, kosher salt, black pepper, thyme, paprika, and cayenne pepper. Sprinkle the seasonings generously on the tenderloin.
