Ingredients
18 hard boiled eggs
2 cups cider vinegar
2 cups hot water
2 cans (16 oz each) sliced beets w/ liquid
2/3 cup packed brown sugar
1 t salt
1 medium onion sliced
4 bay leaves
Directions
- In a large jar, add together vinegar, beet liquid, water, salt, and brown sugar. Mix well.
- Add hard boiled eggs.
- Add beets, onion, and bay leaves.
- Cover and refrigerate at least 2 days.

Our family is from the Amish area of Pa. We use only the beets, beet juice, cider vinegar,and water with the hard boiled eggs.They are delicious!
