Ingredients

  • 18 hard boiled eggs

  • 2 cups cider vinegar

  • 2 cups hot water

  • 2 cans (16 oz each) sliced beets w/ liquid

  • 2/3 cup packed brown sugar

  • 1 t salt

  • 1 medium onion sliced

  • 4 bay leaves

Directions

  • In a large jar, add together vinegar, beet liquid, water, salt, and brown sugar. Mix well.
  • Add hard boiled eggs.
  • Add beets, onion, and bay leaves.
  • Cover and refrigerate at least 2 days.

    Our family is from the Amish area of Pa. We use only the beets, beet juice, cider vinegar,and water with the hard boiled eggs.They are delicious!
