Oatmeal Butterscotch Cookies

Ingredients
- 1 cup softened butter
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 medium eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/2 cups rolled oats
- 1 cup butterscotch chips
Instructions
- Preheat oven to 350 °
- Using an electric mixer, cream butter, brown sugar, granulated sugar, eggs and vanilla together.
- Stir in flour, baking soda and salt.
- Add remaining ingredients and mix well.
- Using a medium size cookie scoop (about a tablespoon in size), drop dough onto a large baking sheet lined with a Silmat.
- Bake for approximately 12 minutes.
- Remove from oven and transfer to wire cooling rack.
