Oatmeal Butterscotch Cookies

Ingredients
  1. 1 cup softened butter
  2. 1 cup packed brown sugar
  3. 1/2 cup granulated sugar
  4. 2 medium eggs
  5. 1 teaspoon vanilla extract
  6. 1 1/2 cups all purpose flour
  7. 1 teaspoon baking soda
  8. 1/2 teaspoon salt
  9. 2 1/2 cups rolled oats
  10. 1 cup butterscotch chips
Instructions
  1. Preheat oven to 350 °
  2. Using an electric mixer, cream butter, brown sugar, granulated sugar, eggs and vanilla together.
  3. Stir in flour, baking soda and salt.
  4. Add remaining ingredients and mix well.
  5. Using a medium size cookie scoop (about a tablespoon in size), drop dough onto a large baking sheet lined with a Silmat.
  6. Bake for approximately 12 minutes.
  7. Remove from oven and transfer to wire cooling rack.
