Darryl & Paul's Chicken Tortilla Soup

Ingredients
- 1 whole rotisserie chicken, shredded
- 5 quarts chicken stock
- 3 diced onions
- 2 Tbs chopped fresh garlic
- 3 fresh jalapeno peppers, chopped
- 1 cup tomato juice*
- 7 fresh tomatoes, diced*
- 1 Tbs Worcherstire sauce
- 1 tsp cumin
- 1 Tbs chili powder
- 4 cups cooked white rice
- 1 bunch cilantro (leaves only)
Instructions
- Pour chicken stock into large stock pot and begin heating
- Meanwhile, sauté onion, garlic & jalapenos, then add to chicken stock
- Add the rest of the ingredients (except cilantro leaves and rice)
- Bring to a boil, simmer for 10 minutes
- While cooling, add rice and cilantro leaves
- Serve with corn or tortilla chips, (optional garnishs: fresh avocado, shredded cheese, sour cream)
Notes
- Since I have no use for tomato juice, I substitute a couple of the fresh tomatoes with a 14oz can of diced tomatoes in tomato juice.
