These Chicken Cheese Enchiladas are bursting with flavor and warmth. Ingredients

  • 3 each chicken breasts, boneless skinless (20 oz)

  • salt & pepper

  • 3 ounces black olives, sliced

  • 1/3 cup onions, finely chopped

  • 1/3 cup sour cream

  • 3 cups cheddar/jack cheese

  • 2 cans (15 oz each) enchilada sauce

  • 1 dozen corn tortillas

Directions

  • Preheat oven to 350°F.
  • In a large skillet, cook chicken breasts, then transfer to a large bowl and shred to bite size pieces.
  • Add half of the black olives, onion, half of the cheese, sour cream, and 1 can of enchilada sauce. Mix well.
  • Coat bottom of a 16 x 9” baking dish with 1/3 cup sauce. Fill tortillas with mixture then roll. Continue until baking dish is full.
  • Pour remaining sauce, cheese, and olives over the filled tortillas. Cover with foil.
  • Bake until the enchiladas are hot and bubbling, about 30 minutes.

    What enchilada sauce do you use? We used to use Trader Joe’s which was great but has been discontinued! 😩 We also add a can of mild roasted green chilis which adds a nice flavor. 🙌🏻

      I’ve been using Las Palmas Enchilada sauce for quiyte some time. If you have a favorite that should work as well. Good luck!
