Ingredients
3 1/2 lb pork butt, cut in 2″ cubes
2 T garlic powder
3 T oregano
3 T cumin
2 T coriander
6 t salt
3 t pepper
1 orange
1 lime
1 onion, sliced
3 bay leaves
Oil
Directions
- Mix together garlic powder, oregano, cumin, coriander, salt, and pepper. Lightly coat cubed pork with mixture.
- Fry in lightly oiled hot skillet just to brown.
- Remove meat from skillet and add to crock-pot.
- Cut orange and lime in half, squeeze juice from both in crock-pot (after squeezing, add to crock-pot as well)
- Add onion and bay leaves to crock-pot.
- Cook for 4 hours on high.
- Heat lightly oiled iron skillet on stove.
- Flash fry small portions of meat to crisp up outside
- Serve with tortillas, guacamole, and salsa.
