Brown Butter Snappers

Ingredients
- 1 cup butter
- 1 ½ cups sugar
- 2 eggs
- 1 tsp cream of tartar
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp vanilla
- ¼ tsp salt
- 2 ¾ cups all-purpose flour
- ½ cup of sugar
- ½ tsp cinnamon
Instructions
- In a small heavy saucepan over medium heat, cook the butter until a light golden brown (about 10 minutes) stirring continuously. Remove from heat and pour into a bowl. Cover and chill for 30 minutes.
- Pour the chilled butter into a mixing bowl & beat for 30 seconds. Add the next 6 ingredients and mix till combined.
- Add the flour. (At this point if your dough seems tacky, cover and chill for 15 minutes or until manageable).
- Combine the remaining ½ cup of sugar with the ½ tsp cinnamon in a small bowl. Preheat oven to 375 degrees.
- Roll dough into 1 inch balls and then into the cinnamon/sugar mixture and place on a parchment lined baking sheet.
- Bake for 9-12 minutes or until lightly browned at edges. Cool the cookies on the pan for a minute before removing to a wire rack.
