Ingredients
- SPRING MIX SALAD:
1 – 5 ounce spring mix package
1/2 red onion, chopped
1/2 apple, chopped
1/3 cup fresh blueberries
1/4 cup roasted pecans
1/3 cup goat cheese
- BLUEBERRY VINAIGRETTE:
6 tablespoon red wine vinegar
1/4 cup fresh blueberries
2/3 cup olive oil
2 tablespoon dijon mustard
2 large cloves garlic
3 tablespoon sugar
1 teaspoon salt and pepper
4 tablespoon water
Directions
- In a large bowl mix all the salad ingredients and set aside.
- Place all vinaigrette ingredients in a blender and blend until smooth.
- Serve immediately and enjoy!
