Banana Muffins

Ingredients

  • ½ cup shortening

  • 1 cup sugar

  • 2 eggs

  • 2 cups mashed ripe bananas

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 cup chocolate chips or chopped nuts

Directions

  • Preheat oven to 350.
  • Cream shortening & sugar.
  • Add eggs, then bananas.
  • Sift together dry ingredients in separate bowl.
  • Stir dry ingredients into banana mixture just until moistened.
  • Stir in chips or nuts.
  • Scoop into muffin cups & bake for 20 minutes.
