Ingredients
  1. 1 t onion powder
  2. 1 t chili powder
  3. 1 t kosher salt
  4. 1/2 t black pepper
  5. 1/2 t thyme
  6. 1/2 t paprika
  7. 1/8 t cayenne pepper
  8. 1 pork tenderloin, about 1 pound
Mango Salsa (combine all ingredients)
  1. 2 cups diced ripe mango (about 2 mangos)
  2. 1/ 2 cup red onion, finely diced
  3. 1 medium avocado, diced
  4. 1/4 c minced fresh cilantro
  5. 2 T extra virgin olive oil
  6. Freshly ground black pepper
  7. Pinch of kosher salt
  8. 1/4 t red pepper flakes
  9. Juice from 1 lime
Instructions
  1. In a small bowl, combine the onion powder, chili powder, kosher salt, black pepper, thyme, paprika, and cayenne pepper. Sprinkle the seasonings generously on the tenderloin.
  2. Cook the tenderloin over a hot grill until it reaches an internal temperature of 145 ° for medium and 160 ° for well done, about 20 to 30 minutes. Rest the meat for 10 minutes before slicing.
