Orzo Pilaf with Mushrooms

Ingredients
  1. 1/2 pound sliced fresh mushrooms
  2. 1 small onion, finely chopped
  3. 2 tablespoons olive oil
  4. 2 garlic cloves, minced
  5. 1 can (14-1/2 ounces) chicken broth
  6. 1 cup uncooked orzo pasta
  7. 1/4 teaspoon salt
  8. 1/4 teaspoon pepper
  9. 2 tablespoons minced fresh parsley
Instructions
  1. In a large saucepan, saute mushrooms and onion in oil until tender.
  2. Add garlic; cook and stir 1 minute longer.
  3. Add the broth, orzo, salt and pepper. Bring to a boil.
  4. Reduce heat; cover and simmer for 10-14 minutes or until pasta is tender.
  5. Stir in parsley.
