Darryl & Paul's Chicken Tortilla Soup

Ingredients
  1. 1 whole rotisserie chicken, shredded
  2. 5 quarts chicken stock
  3. 3 diced onions
  4. 2 Tbs chopped fresh garlic
  5. 3 fresh jalapeno peppers, chopped
  6. 1 cup tomato juice*
  7. 7 fresh tomatoes, diced*
  8. 1 Tbs Worcherstire sauce
  9. 1 tsp cumin
  10. 1 Tbs chili powder
  11. 4 cups cooked white rice
  12. 1 bunch cilantro (leaves only)
Instructions
  1. Pour chicken stock into large stock pot and begin heating
  2. Meanwhile, sauté onion, garlic & jalapenos, then add to chicken stock
  3. Add the rest of the ingredients (except cilantro leaves and rice)
  4. Bring to a boil, simmer for 10 minutes
  5. While cooling, add rice and cilantro leaves
  6. Serve with corn or tortilla chips, (optional garnishs: fresh avocado, shredded cheese, sour cream)
Notes
  1. Since I have no use for tomato juice, I substitute a couple of the fresh tomatoes with a 14oz can of diced tomatoes in tomato juice.
